The responsibilities of the Sous Chef include overseeing the Hot Choice Buffet products to guarantee they meet the standards in taste, quantity, freshness, and quality. Attention to detail is given towards working swiftly, maintaining cleanliness, organizing effectively, and meeting product requirements.
Responsibilities:
- Follows the recipes and procedures outlined by Golden Corral to prepare Carving and Display Cooking products for the Hot Choice Buffet.
- Abides by Golden Corral standards while grilling to meet quality benchmarks.
- Maintains a standard of delivering fried dishes that are consistently hot and fresh.
- In the event that the Buffet Attendant is not around, the Cook takes on the responsibility of refilling the items on the Display Cooking Station.
- If the Carver is unavailable, they support guests in choosing from the alternate carved meat selections.
- Thorough implementation and following of the buffet production system to safeguard quality and meet shelf life requirements.
- Maintains the ideal temperature for all products throughout the cooking, holding, and serving stages.
- Uses the Hot Choice Buffet Production Guide and the Display Cooking Hot Cook Production Guide to oversee the inventory of all hot cook items effectively.
- Executes the starting and ending administrative processes.
- Verifies the cleanliness of the cooking area and utensils, as well as checks for cleanliness on dishes before using them.
- Supervises the duty timetable and ensures that cleanliness, service, and quality levels are maintained.
- Abides by the mandates of the local health department.

- Understands and fulfills the responsibilities associated with just-in-time delivery.
