The Saut Cook's role involves overseeing the banquet kitchen and its food production operations to cater to events efficiently.

What You’ll Do:

• Plan, oversee and assist in day-to-day culinary operations of the banquet kitchen as it pertains to banquets
• Assigns preparation and specific duties lists to auxiliary banquet kitchen staff for efficient execution of upcoming events.
• Select, order, and inspect and use only the highest standard food product in preparation of all menu items as per Banquet Event Order (BEO).
• Oversee and aid in production and execution of menu items.
• Monitor the receipt, storage, and rotation of food product (as to comply with health department regulations), including coverage, labeling, dating and placing items in proper containers for kitchen service
• Evaluate the work performance of cooks and give guidance and discipline as necessary.
• Maintain effective communications with Executive Sous ChefExecutive Chef concerning food production.
• Facilitate the professionalism of our banquet team by adhering to proper language, uniforms, hygiene, and employee relations.
• Continue self-education of hospitality industry using available tools such as internet, industry magazines, books, and organization.
• Leads the Banquet Kitchen Team in food preparation and presentation during all events.
• Participates in training staff on menu items including ingredients, preparation methods and unique tastes. Hot Kitchen and Cold Kitchen
• Operates and maintains all department equipment and reports malfunctions.
• Purchases appropriate supplies and manages inventories according to budget.
• Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
• Trains associates in safety procedures and supervises their ability to follow loss prevention policies to prevent accidents and control costs.
• Effectively investigates reports and follows-up on associate incidents.
• Sets a positive example for guest relations.

Qualifications:

• Interacts with patrons to gather feedback regarding product quality and service experience; adeptly responds to and resolves guest concerns and complaints.
• Supports team members in offering top-notch customer support. Ensures a clear understanding of expectations and boundaries among associates.
• Assesses the service actions of associates and provides commentary to help them consistently enhance their service delivery.
• Stresses the significance of guest contentment during departmental meetings and focuses on constant advancement.
• Guiding employees in ongoing training programs to enhance their understanding of guest expectations.
• Assists as needed in the interviewing and hiring of associate team members with the appropriate skills.
• Backs the concept of cross-training associates during departmental orientation to facilitate smooth day-to-day operations.
• Engages with various on-the-job training methods for employees; manages ongoing training initiatives and leads training sessions as required.
• Conveys the expected performance levels as per the job roles defined for each position.
• Takes part in assessing the performance of associates and gives feedback whenever required.
• Works to establish and sustain open, interactive associations with peers and emphasizes the necessity for team members to do the same with one another.
• Working a flexible shift that may involve weekends, holidays, and rotating shifts is a key requirement.
• Holding a ServSafe management certification is obligatory
• Possessing a culinary certification or relevant formal education is advantageous.

Physical Requirements:

• Should be able to handle moderate weight by lifting, pushing, pulling, and carrying. Must be able to stand or walk for extended periods, involving frequent bending and twisting movements. Proficiency in using culinary instruments such as knives and commercial equipment, along with a strong sense of taste and smell, is essential.

Working Environment:

• The hotel's interior includes restaurant and kitchen spaces that are exposed to humidity, steam, and extreme temperatures.
• Confrontation with dangerous cleaning compounds.
