Job Description: Short/Sides Cook
The Cook is responsible for ensuring that all items on the Hot Choice Buffet meet the standards set for taste, quantity, freshness, and quality. They pay close attention to working quickly, maintaining cleanliness, organizing effectively, and adhering to product specifications.
Food Production:
- Prepares Hot Choice Buffet items, such as Carving and Display Cooking dishes, following the specified recipes and procedures from Golden Corral.
- Adheres to the Golden Corral standards when grilling various menu items to uphold quality assurance.
- Ensures that each fried dish is consistently delivered with freshness and heat.
- In the event that the Buffet Attendant is not around, the Cook takes on the task of refilling the items on the Display Cooking Station.
- If the Carver is not present, they help guests by offering alternative choices of carved meats.
- Complete utilization and observance of the buffet production system to maintain quality and adhere to shelf life requirements.
Operational Excellence:
- Keeps all items at the required temperature during cooking, holding, and serving.
- Relies on the Hot Choice Buffet Production Guide and the Display Cooking Hot Cook Production Guide to maintain records of all hot cook products in stock.
- Organizes the opening and closing of administrative operations.
- Maintains equipment in line with the specifications detailed in the Equipment Maintenance manual.
- Administers the orderly rotation of food products using the first-in, first-out methodology.
- Inspects product quantities and matches them with the Manager's build-to inventory during the commencement and closure of shifts.
Cleanliness:
- Ensures the cleanliness of the Hot Cook area and smallwares and examines dishes for any residues prior to usage.
- Administers the duty schedule and confirms that cleanliness, service, and quality expectations are fulfilled.
- Abides by the laws enacted by the local health department.
- Ensure the char grill remains spotless and free of debris for optimal product quality and sanitation measures.
Guest Service:
- Ensures the consistent warmth and freshness of Hot Choice Buffet selections, particularly Display Cooking items, to meet guest expectations.
- Acknowledges and adheres to the role requirements concerning just-in-time delivery.
- Offers a warm and courteous reception to customers and supports them in finding products.
- Consistently upholds professionalism in all communication exchanges.
